Autumn Cinnamon Fruit Compote

Here the compote is with Zabaglione.  It can be served with pannacotta, yoghurt, ice-cream etc etc etc.  And the children love it, except this morning, my daughter said she prefers raspberries mixed in too because she likes the “sweet and sour” taste so do as you wish…

Serves 4-6

100g granulated sugar
50mls water
3cm of cinnamon stick
225g blackberries
2 plums
– consider pears, apples, perimons …. depending on the ripeness you may like to heat them in the syrup to soften…..

1.  Put the sugar and water in a heavy based pan over a low heat and melt the sugar.
2. Add the cinnamon stick.
3. Once it has melted, turn up the heat and let it bubble for a couple of minutes.
4.  Remove it from the heat and leave the cinnamon to infuse for an hour before adding the fruit.

    Yum! Was looking for a pudding for Sunday lunch that I can then take to work as breakfast with some yoghurt – perfect!
