Caesar Salad

We’ve all had Caesar salad at some point.  And this point for  me, where Christmas is coming and I am getting fat – a hazard of demonstration preparation – a salad is called for.  You may have seen I am salading away with the re-addition of the Spicy Thai salad, and here is another.  Not so interesting or as slimming actually, but still good for us!

per person, though you will probably have enough dressing for the next day too.

Cos Salad or whatever you have
1/4 clove garlic – see top tips on preparation
1-2 anchovies from a jar or tin – if they are salted then 1 is enough
1tbsp lemon juice
3-4 tbsp virgin olive oil
1 heaped tbsp grated parmesan cheese plus shavings made with a peeler
1 heaped tbsp creme fraiche – I use the low fat option
3 or 4 anchovies  from the deli counter to lay on top

1.  Prepare the salad
2.  Take some crusty bread such as mine under bake (!!) and toss it in a sprinkling of olive oil.  Put them in a hot oven on a baking tray for just about 5 minutes.  My aga takes about 3 so be careful. Let them cool.
3.  Grind the garlic in a pestal and mortar with the anchovy or squish with a fork on a plate and add to a jam jar.
4.  Add the remaining ingredients in the order they are listed above or put them all in a jam jar and shake.
5.  Toss all the ingredients together and serve with extra parmesan shavings if you like, and lay the deli anchovies on top. Season according to taste.
