Coleslaw with Mustard and Lemon Creme Fraiche
It is so satisfying when the fridge is empty, or near empty and I can go into the veg garden and find what I need for lunch. This has been the vegetable story for most of the summer – if only courgettes froze well (courgette slime does!). Anyway, this is straightforward, tasty, and fills the gap.
2 medium courgettes
1 large carrot
Half a red onion
250mls full fat or light crème fraiche
Juice of half a lemon
1 heaped teaspoon of grainy Dijon mustard
1. Grate the vegetables.
2. Mix the dressing and toss into the salad.
3. Serve (if you prepare it in advance, liquid can escape from the courgettes).
