Courgette Salad
Nothing but yellow courgettes have greeted us this year. And anyone who has read my last few posts will realise that we have no shortage of them! This salad happened, like so many of the best creations, by accident insofar as I used what I had. It is also supersonically healthy as well as delicious.
Ingredients
Courgettes (any colour)
Feta Cheese
Lemon
Cracked Black pepper (it really makes a difference)
Mild Seasalt such as Maldon
1. Take a peeler and peel strips from the courgette. You will find you have the core left in the very centre.
2. Squeeze juice of a lemon.
3. Crumble feta on top.
4. Toss with salt and pepper.
5. Decorate with borage flowers if you have any….

I’ve been catching up on the blog and am so excited about the salmon ceviche and courgette salad which I’ll try this weekend with the sparkle drink.
