In the hope that I will have time to open stockings with the children, go to church, have a drink before the feast, and not feel addled by all of the cooking, this is my second step in achieving that… the first being Christmas pudding (not that anyone makes it on the day!)…
75g brown sugar
125mls freshly squeezed orange juice
1. Put the first 3 ingredients in a pan over a medium heat and let them blend together for about 5 minutes.
2. Add the cranberries and simmer in the mixture until the cranberry skins burst.
3. Help them along by mashing them a little.
4. Remove and store in the freezer in a freezer-friendly container until Christmas Eve.
