Feeling British blustery or tropical?  Either way, this will make you feel sunny.  The fig balsamic vinegar used is, I realise, not easily accessible but for anyone who lives near Sturminster Newton, you can buy it at Holebrooks in the town centre. My daughter chose it and in the absence of sherry vinegar in my stocks at the moment, it is a wonderful replacement.  However, no pressure, sherry vinegar will be fine…



550g tomatoes
150g cucumber
1 red pepper
3 cloves garlic
40g of stale bread, fresh bread, any bread really but stale is best, soaked in 2 tbsp sherry vinegar (dependent upon strength of vinegar used you may need more)
1 tsp salt

1. Whizz the lot and serve in chilled bowls or glasses with mixed chopped colourful vegetables on top.
