Pick me up breakfast

This morning I am a zombie. Last night I ridiculously for no apparent reason woke up at 1a.m. after falling asleep really quickly a couple of hours before! So after the school run I craved a savoury breakfast and this picked me up, albeit not for long enough, but still, I think the combination may well become a habit, not the sleep bit I hope, but the food.

Ingredients
2 flat breads or tortillas (gluten free for me)
A handful of grated cheddar cheese
1 ripe avocado
Salt flakes
tobasco
1 lime
Fresh coriander
(Had I had radishes to hand I would have finely sliced them and added them in at the end.)


Heat a large non stick frying pan and lay the tortilla in it. Top with with grated cheese, followed soft avocado, a sprinkling of salt flakes, tobasco and a squeeze of lime. Place the second tortilla on top and when the base is lightly browned, flip it over with a large spatula and brown the other side.

Serve on the nearest chopping board, take a large knife or pizza cutter and slice through. Finish with coriander leaves, tucking them in the tortilla if you like, and have extra lime and tobasco on the side, just in case.
