Smoked Mackerel Pâté

The children chose, and they prepared.  I sat at the kitchen table with a cup of tea, directing!  This is such a simple recipe that perhaps it does not even need to be here, but then we all like simple recipes, and sometimes the obvious needs stating, – it does for me anyway.

280g  cream cheese
4 mackerel fillets – or thereabouts
Juice of half a lemon.  Save the other half for wedges to serve.

  1.  Mix the ingredients together in a Kitchenaid using the beating attachment if you have one.  Or use a whisk.  Using contraptions makes is lighter and ensures it is well mixed, but if you want to build those muscles, mix with a fork.
  2. Serve with toasted sourdough granary bread, but it is delicious on anything really.
