Tomato and Basil Butter

We had friends staying over the last few days and due to popular demand, I made this repeatedly.  We had it with Granny Dot’s Vienna Bread Rolls.  The only downside is that once you start….

Ingredients
150g unsalted butter at room temperature
90g sun-dried or sun-blushed tomatoes
1 tbsp basil leaves
A pinch of sea salt

1.  Mix all of the ingredients together in a small blender compartment until you have a roughly chopped mixture. or Chop the ingredients up roughly and mix together.  Roughly chopping adds to the texture and interest of the butter.
2.  Put it in the fridge and serve cold with bread.  It could also be added to a variety of dishes such as fish, steak, hot vegetables.
