Tortilla Pizza
I am wondering if this is a sensible addition, but here we are anyway. Somebody may find it useful. It is one of those things that if you didn’t think of it, no matter how straightforward, you may be grateful when you are in a rush. I got the idea from a pub in Newcastle! I tend to make it when children are coming for lunch or I am on my own.
2 tortillas
two handfuls of cheddar cheese
fresh tomato sauce
1. Put a frying pan on the heat.
2. Lay a tortilla on it and add the filling and place the second tortilla on top. You can of course add whatever you want; I am just giving you what I gave my children this evening.
3. Heat until the bottom side is crispy and flip it over. Well done if you can do this neatly; I can’t.
4. Do the same with the other side and remove the filled tortilla to a chopping board and use a large sharp knife or a pizza slice to cut.

Love this idea but am wondering if you are using a flour or corn tortilla?
